For twelve months we travelled from the bottom of eastern Victoria, through New South Wales to the top of Queensland, meeting the people who grow, fish, farm and craft the best produce in this country. We’ve even filmed a TV show about it.
Every ingredient on this menu has a story - and we’ve stood in the dirt, by the ocean, or in the shed with the people who make it possible. We know them. We trust them. And we want you to taste that connection all cooked over yellow box local sustainable timber fired until it's charcoal.
Somewhere along the way, fixed set menus took over. They made kitchens complacent - and diners passive. As chefs, we became predictable. As guests,
you lost your freedom.
This is our answer.
